Distillation

Distillation is a fascinating process that separates alcohol from water based on their different boiling points. Gary Arndt explains that by heating a mixture to the boiling point of alcohol, but below that of water, the alcohol vaporizes and can be collected separately 1. This method is not only used for creating spirits but also for desalinating water and refining petroleum products. The origins of distillation trace back to ancient Babylon, where it was initially used for perfumes rather than beverages.

Distilling isn't just used for the separation of water and alcohol, it's used for separating water from salt, as well as separating different petroleum products from crude oil.

The history of distillation reveals its diverse applications and gradual evolution into alcohol production. Initially, cultures like the Babylonians and Alexandrians used distillation for perfumes and medicines, not for drinking 1. It wasn't until about a thousand years ago that distillation began to be used for creating consumable spirits, with significant developments occurring in China and later in Europe.

Distilling for the purpose of creating alcohol for consumption didn't begin until about 1000 years ago.
