Ingredients:
- 2 cups walnuts or almonds (or any nut/seed of choice)
- 1 cup shredded unsweetened coconut
- 2 cups soft Medjool dates (pitted)
- 2 tablespoons coconut oil
- 1/2 teaspoon sea salt
- 1 teaspoon vanilla extract
Instructions:
- Process Nuts and Coconut: In a large food processor fitted with an S blade, process the walnuts and coconut until crumbly.
- Add Dates and Other Ingredients: Add the dates, coconut oil, vanilla, and sea salt. Process again until a sticky, uniform batter forms, checking every few seconds to avoid over-processing.
- Form Balls: Scoop the dough by heaping tablespoons and roll them between your hands to form balls. Hands might get sticky during this process.
- Chill: Arrange the balls on a baking sheet lined with parchment paper. Freeze for at least an hour to set.
- Storage: Store the balls in a sealed container in the fridge for up to a week or in the freezer for longer shelf life. Some prefer to eat them frozen for a harder texture.
