Classification

Tomatoes, often mistaken for vegetables, are botanically classified as fruits due to their seed-bearing nature. Gary Arndt explains that despite their classification, tomatoes are commonly treated as vegetables in culinary contexts, similar to cucumbers and peppers 1. The origins of tomatoes trace back to the coastal regions of western South America, encompassing modern-day Ecuador, Peru, Bolivia, and northern Chile. These early tomatoes were likely small, berry-sized fruits, vastly different from the varieties we know today.

   

Pre-European

Before European contact, tomatoes were domesticated and cultivated by ancient civilizations in South America and Mexico. Gary notes that the earliest evidence of tomato cultivation dates back to around 500 BC in southern Mexico, likely by the Maya people 1. This domestication led to the development of various tomato varietals differing in color, texture, and shape. However, detailed records of their use and cultivation during this period are scarce, with the first substantial documentation occurring with the arrival of the Spanish in the Americas.
