The Complexity of Bitter

Bitter taste receptors evolved as a protective mechanism against poisons, alerting us to potential dangers in our environment. However, not all bitterness is harmful; many animals self-medicate with bitter herbs, and numerous pharmaceutical drugs contain bitter compounds that may offer health benefits. Interestingly, bitter receptors are also found in other parts of the body, such as the respiratory system, where they play a role in responding to bacterial infections.
